 Woodlawn Coffee and Pastry bakes sweet and savory pastries from scratch every morning. We feel very privileged to be here in Oregon where we're surrounded by such a wealth of quality ingredients from which to bake. One of the joys of baking is being able to creatively use what is on hand and perfectly ripe and thus ready to be used. Take an Oregon Hood strawberry, for example. Would it be best in a pie, or should we save the early summer sweetness in a jar? Or shall we just combine a bowl of these ripe red berries with a fresh batch of housemade mascarpone cream spiked with boozy Tahitian vanilla beans and an irresistably short shortbread? The possibilities are nearly endless. With great joy and gentle hands we love to make decisions like these while we bake daily here in NE Portland.
